Treacle Suet Pudding – quick microwave version

Serves 4

The ultimate winter pud, to be served with lots of hot custard - you can use jam, honey or marmalade instead of syrup.

3 tablsp golden syrup

125g / 4oz SR flour

50g / 2oz shredded suet (beef or vegetarian)

50g / 2oz caster sugar

1 egg

5ml / 1 tsp vanilla extract

90ml / 6 tabsp milk

  1. Thoroughly grease a 1.25 litre / 2 ¼ pint pudding basin. Pour in the syrup until it covers the base.
  2. Sift the flour into a bowl and toss in the suet and sugar. Thoroughly beat together the egg, vanilla essence and milk, then mix into the dry ingredients. Spoon carefully over the syrup in the basin. Cook, uncovered, on FULL for 4-4½ mins until the pudding has risen to each the top of the basin. Allow to stand for two minutes.
  3. Turn out onto a serving plate and serve with custard.

Kate, I guess this recipe was for an 800 or 900w, so maybe test with a skewer and be prepared to go another half minute....
